De Leon Springs was visited by Spanish explorers and later associated with the legend of the Fountain of Youth — the spring's clear, constant waters inspired centuries of mythologizing. Today the park is known for two things: its spring swimming area, and the Old Spanish Sugar Mill Restaurant, a unique on-site restaurant where diners cook their own pancakes on griddles built into the tables, using organic stone-ground flour milled on the premises. The combination of a natural spring swim and a DIY pancake brunch makes it one of Florida's most distinctive spring experiences. The park also offers kayaking and paddleboarding.
